ChickeN CordoN BleU По Россему

Well it has been a while since I did one of these blog things and I figured I might as well do another. Cathy asked me the other day if I would make dinner when she got home from class. Now I do cook a lot but lately we don’t really seem to have time to sit down for dinner together because of our crazy schedules.
So she asked me and I agreed. Then I thought to myself, oh crap what am I going to cook. You have to understand I don’t just do Beenie weenies for dinner. When I cook I like to go all out and create something that not only tastes good but looks good as well. So, when I got out of class and headed straight to the store. Bad idea. I walked around for about an hour but couldn't come up with anything. I then realized it is really hard to shop when you're hungry. I put everything back that I had amassed in my cart and went back home for some lunch and pondering. I decided on Chicken cordon bleu. Now I have never made it before but it just sounded good.
I’m not really the type to follow a recipe or directions when cooking. I just look at the ingredients and pictures and go from there. So after researching this dish here are the components I came up with:

Chicken ( I used chicken strip meat but you can use whatever you want. Stuff without bones is better unless you like a little crunch to your chicken cordon bleu.)
Swiss cheese
Ham slices
Eggs
Bread crumbs
And last but most important Jack Johnson Music.

This is a pretty easy dish to make and here is how I did it.

Preheat your oven to 400 or whatever you feel like. I would go with 400 thought if you want it to cook right.

Next take your chicken and place plastic wrap over it, so when you beat the crap out of it you don’t get chicken juice everywhere. Ok, put it one piece at a time on the counter or a cutting board and use like a rolling pin or something to pound it out into thin pieces.
Once they are all like 2/8 or if you reduce it 1/4 inch thick you are ready for the next step. You don’t have to measure it just get it thinner that what it is.

Next put a slice of Swiss cheese on each piece and a slice of ham. If you did small pieces of chicken, like I did, then you have a top and a bottom. If they are bigger, then just fold it over.

Ok now you need to crack some eggs and put them in a bowl. In another bowl you need bread crumbs. What you are going to do is dip the chicken, with the cheese and ham in the middle, into the eggs. Then go straight into the bread crumbs.

Make sure you have a greased cooking sheet and put them directly on there. Now just bake your chicken for about 30 minutes. That should be it.

As a side I cooked green beans in a frying pan on medium heat with
garlic, butter and some olive oil. When they were almost done I squeezed half a lemon over the beans and let them cook a bit longer.

Here is what it looked like on the plate.

I hope you enjoy this as much as we did.

Almost forgot, This is what I came up with for dessert. It's a chocolate moousse with chocolate dipped strawberry on top. :)
